For the freshes fish... if you can kill it just prior to cooking it, I find it's the tastiest. First, cut along the spin of the fish on both sides. Cut across the gills to remove the head, then separate the meat from the body of the fish. Then you remove the meat from the skin and there you have it! A delicious fish fillet.
